TRUFFLE BASIL PESTO
A classic basil pesto is a beautiful thing. Wonderfully versatile to have in your kitchen, you can toss it in your pasta, use as a topping on your breakfast, or as a dip for your chips. Now add the earthy aroma of white truffle and you have an easy way to introduce that intoxicating aroma to your everyday meals.
Ingredients you will need:
100g fresh basil, roughly chopped
50g flat leaf parsley, roughly chopped
50g toasted pine nuts
50g parmesan, grated
2 cloves of garlic
50ml extra virgin olive oil
15ml PS.Cafe Truffle Oil
Sea salt
White pepper
Step 1
Toast pine nuts over low heat in a pan, tossing and moving the nuts, around the pan until golden brown and fragrant. Take off the heat and allow the nuts to cool.
Step 2
Transfer to a food processor and add the parmesan and garlic. Pulse until finely ground. Add basil and parsley. Blitz while drizzling the olive oil in a slow and steady stream until the pesto comes together and emulsifies. Repeat with the truffle oil.
Step 3
Transfer pesto into a mixing bowl and season to your liking with sea salt and pepper.
